Oatmeal Raisin Scones
Trying to get back on track with excercising, cleaning house and homeschooling (homeschooling is going pretty well actually). Here is a yummy recipe I came across this weekend:
1 cup flour
3 TBSP brown sugar
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/3 c. butter
1 c. oatmeal
1/2 c. raisins or chocolate chips
1 beaten egg
1/4 c. milk
Milk
In a bowl combine flour, sugar, baking powder, and cinnamon. Cut in butter till mixture resembles coarse crumbs. Stir in oats and raisins. Combine egg and 1/4 c. milk, add to flour mixture. Stir just till moistened (will be sticky). On a lightly floured surface, pat dough into a 7 inch circle. Cut into 12 wedges; place on a baking sheet. Brush with milk. Bake in 400 degree oven for 10-12 minutes or until light brown....Serve warm. Makes 12
