Breakfast Recipes

When we celebrate Christmas at home one of our traditions after opening the gifts is to have brunch.  These are the recipes I usually make:

SAUSAGE & EGG CASSEROLE:

Make the night before

6 Eggs slightly beaten

6 slices of bread diced

1 c. garted cheddar cheese

1 LB of Bulk Sausage

2 c. milk

1 tsp salt

1 tsp Dry Mustard

Brown sausage.  Drain Grease.  Mix together wtih all the other ingredients.  Place in a buttered 8" dish for 12 hours or overnight.

Bake 350 degrees for an hour or until firm in center.

HASHBROWN CASSEROLE

2 lbs frozen hashbrowns ~ THAWED

1/2 c. melted butter

1 pint Sour Cream

1 Can Cream of Mushroom Soup

1/2 c. chopped onion

2 c. grated cheddar cheese

Defrost Potatoes.  Add everything together.  Mix well.  put in a butter flat casserole.  bake for 1 hour @ 325 degrees until brown on top

My father was a chemist and loved to experiment in the kitchen.  He created a simple pancake recipe that is easy to remember because you just use 1 of everything.   I usually triple it for my family.

1 cup flour (I use whole wheat flour)

1 tsp. baking powder

1 tsp. salt (I usually halve that)

1TBSP sugar (I usually skip this)

1 TBSP oil (I use melted butter)

1 cup milk (Buttermilk, kefir, sour cream, yogurt or any combination work great, he usually used yogurt)

1 cup bluberries (optional)

Mix dry ingredients together in a bowl.  Add oil and milk.  Mix well (I like to mix it in the food processor or blender).  heat griddle.  add ladleful to hot buttered griddle.  Flip when bubbles start to form.  finished when brown and cooked through.  Serve with syrup or your favorite topping.

Thanks so much for these recipes, after being cooped up for days, I have had a chance to try them out. Trying to live as natural as possible our family buys organic bulk herbs and spices, so luckily I had many of the ingredients on hand.
