Texas One Dish

1 lb Ground Beef

2 onions, chopped

1 green pepper, chopped

1 cup oats

1 can diced tomatoes

½ cup brown rice

1 tsp chili powder

1 tsp garlic powder

1 tsp cumin

1 tsp salt

cheddar cheese optional

pepper to taste

Preheat oven to 350 degrees.

In a large skillet, sauté beef and onions over medium high heat. When onions begin to look translucent, add bell pepper. Continue cooking till beef is browned completely. Drain grease well. Add oats, stirring well. Add remaining ingredients, stirring well to completely mix. Transfer to 2 quart baking dish. Grate some Cheddar Cheese on top. Bake for 45 minutes or until rice is tender.

Note: May want to cook rice first or use left over rice. Doesn’t take as long.
