Chicken Broccoli Casserole
When my son Zach was born a friend of mine brought me this casserole....I have made a couple of "improvements" to it. I had forgotten about this recently until we were given a can of French Onions and since I dont make the traditional green bean casserole I was trying to remember what I used them for. Here is the recipe:
2-3 cups of cut up cooked chicken (I usually use the breast meat, but you can use left overs from a roast chicken)
1 head of broccoli cooked (or package of frozen broccoli thawed)
1 can of cream of chicken or mushroom soup
milk (I usually measure 1/2 - 1 soup can's worth)
1 cup of cheddar cheese
1 -2 cups of french onions
Put chicken and broccoli in a casserole dish (I can fit this in a 8X8). In a separate stir together soup and milk and then pour into casserole dish. Sprinkle cheese on top, and then the french onions on top of the cheese. Bake for half hour in a 350 degree oven.
