Pumpkin Bread

Pumpkin Bread

To make this a bit healthier, I cut the sugar back by 1/2 cup and used sucanat. I used freshly ground wheat flours.

2 1/2 c sugar
3 1/2 c flour
2 t. baking soda
1 t. cinnamon
1 t. nutmeg
1 1/2 c raisins (optional)
1 c walnuts (optional)
2 c cooked, mashed pumpkin
1 c oil
1/3 c water
4 eggs

350'F for approximately an hour depending on the size of the pans. Smaller ones could be quite a bit less. I use normal bread load pans and that is about an hour.
